WSU Viticulture & Enology Program and the Washington Wine Technical Group Present:

2011 Vintage in Review

 

This is a half-day event designed to discuss the some times challenging 2011 vintage. The event will feature respected winemakers providing their impressions about the vintage and two technical discussions about strategies for dealing with high acid fruit and moldy or mildew infected fruit. There will be two panels at the end of each technical session and final comments by the president of the Washington Wine Technical Group. After the workshop is complete there will be a tour of the WSU Prosser Enology Winery and newly renovated laboratory with Dr. Jim Harbertson and Dr. Thomas Henick-Kling on hand to explain the new developments.

8:30-9:15 AM   An Assessment of a Difficult Vintage

The speaker will discuss picking decisions and compare/contrast with previous vintages. The speaker will also provide ideas about how to identify problems and to how to adapt to them.

9:30-10:00 AM  Adjusting acidity by chemical and biological means

The speaker will discuss strategies for dealing with different types of acidic fruit and provide technical details about different deacidification agents.

The speaker will discuss the use of heat treatments to improve phenolic extraction.

10:30-11:00 AM  Strategies for Dealing With Botrytis or Mildew Infected Fruit

The speaker will discuss different ways to deal with fruit infected with various molds and mildews in primarily white grapes.
