Registration is still open for WAVEx, a condensed version of the popular research seminar Washington Advancements in Viticulture and Enology (WAVE), on July 10, 2019, from 9 a.m. to 12 p.m. at Chateau Ste. Michelle Winery in Woodinville. WAVEx is sponsored by the Washington State Wine Commission, Washington State University and Woodinville Wine Country.
The WAVEx presentations will explore how to take wine quality to the next level through the theme “Managing Native Populations of Yeast and Bacteria.” WSU scientists Drs. Charles Edwards and Thomas Henick-Kling will share practical tips and application of research to help winemakers manage native fermentations through pH, sulfur dioxide, and pied du cuvé (native starter culture), how to work with high pH fruit, make cross inoculations and manage cellars to contain and control microorganisms like Brettanomyces. The seminar will conclude with sensory evaluation of microbial instability in wines.
Pre-registration is encouraged as seats are limited.
The purpose of WAVEx is to raise awareness about the value of research funded by the wine industry through the grape and wine assessments paid to the Washington State Wine Commission. According to feedback from those who attended previous WAVE and WAVEx events, the seminars help growers and winemakers access and apply research outcomes in their operations.
